How many missions does it take your Squaddies, LCpls, and Cpls (and up) get their next promotion? I have never run a successful mission and NOT had every Squaddie, LCpl, and Cpl get a promotion. There's Zombies as well. An ADVENT soldier counting as 1 in the Activity that got killed, turned into a Zombie, then killed again (either directly or by dealing with the creating alien) will count double in the action summary.

When you reinstalled XCOM 2 and LW2, did you make sure their directories were empty of other changes? That's probably true. You probably want to clean up your profile directory "/Users/<username>/Documents/My Games/XCOM2/". In there go into "XComGame/Config" and delete everything...

I wouldn't necessarily put stun lancers in the "need to be controlled" camp. They're dangerous and annoying, but having one unit stunned for a turn.... Stun Lancers can also knock a soldier unconscious for the rest of the battle. Better hope you have a Specialist with an unused charge of ...

I've stated this several times before but RNG based balance is the worst sort of balance because it doesn't really balance anything, it just makes a mess of your tactics. If fire grenades are OP currently (i agree to that) changing them to 75% chance to set an enemy on fire won't make them 25% weak...
