Bronzeman- Ironman but with restarting missions allowed- is currently supposedly workable if you change a setting in XComGameCore.ini However, if you do so the 'Restart Mission' button on the menu does nothing when you click it.

If you look in the patch notes, this will be fixed in the next patch. For the moment, you can do restartlevel command in the console to bronzeman it.
